Red Bell Pepper + Sweet Chicken Sausage Breakfast Burritos

These Red Pepper + Sweet Italian Chicken Sausage Breakfast Burritos are the perfect protein-packed breakfast to heat up and enjoy on the go or freeze to reheat in a pinch!

1 lb. Sweet Italian Chicken Sausage
6 Large Eggs
1 c Egg Whites
1/2 c Cottage Cheese
1/4 c Water
1/4 tsp Black Pepper
1/2 tsp Salt
1/4 tsp Garlic Powder
1/4 tsp Onion Powder
1/2 Large Reb Bell Pepper (diced)
8–10 Large Flour Tortillas
3/4 c Shredded Cheese
Instructions
- Cook the Sweet Italian Chicken Sausage in a pan over the stove with olive oil until cooked all the way through; set aside
- Preheat the oven to 350 F
- Add eggs, cottage cheese, water, and seasonings to a blender and blend to combine
- Lightly coat a cookie sheet with avocado oil/non-stick oil and pour the egg mixture onto it
- Evenly spread the diced bell pepper and cooked chicken sausage over the egg (mix it carefully in if you have to)
- Carefully place the egg mixture into the oven and bake for 30-40 minutes until cooked all the way through (*note some ovens and higher altitudes may require a longer cook time)
- Remove and allow to cool before cutting 8-10 even rectangles (make one large cut down the middle then evenly measure out 4-5 rectangles across (depending on how much egg you want in your burritos)
- Fold your burritos: Add one egg rectangle to a large flour tortilla, top with cheese, then add another egg rectangle on top of that. NOTE – if you would like less egg, only do one layer – this will double the number of breakfast burritos you get from 5 to 10). fold the sides of the tortilla in and roll the burrito up carefully to tightly seal in the eggs and cheese. Wrap tightly in parchment paper and then tin foil
- Store the burritos in the fridge for up to a week, or in the freezer for 6-12 months (if freezing, place the burritos in a plastic bag)
Notes
Reheat Instructions: Reheat on a pan with olive oil or butter for a toasted outside, or in the microwave for about 1.5-2 minutes (REMOVE FOIL BEFORE MICROWAVING)
Sweet Italian Chicken Sausage: I like to use the Sweet Italian Chicken Sausages from Trader Joe’s – I just remove the casing using a paring knife
