Ingredients You’ll Need:
For the Cheeseburger Nachos:
- Baby Potatoes
- Olive Oil
- Salt
- Pepper
- Garlic Powder
- Lean Ground Turkey
- Yellow Mustard
- Shredded Lettuce (Romaine or Iceberg)
- Shredded Marbled Cheese
- Dill Pickles (optional for garnish)
For The Secret Sauce:
- Yellow Mustard
- Kewpie Mayo (regular mayo works, too)
- Ketchup
- White Vinegar
- Coconut Sugar (or white sugar)
- Pickle Juice
- Dill Pickles (finely diced)

How to Make These Cheeseburger Sheet Pan Nachos with Smashed Baby Potatoes and Ground Turkey:
1. Preheat Your Oven
Preheat your oven to 400°F.
2. Par-Boil Your Baby Potatoes
Bring a large pot of salted water to a boil. Add the baby potatoes and cook for about 10 minutes, or until fork-tender.
3. Smash Your Potatoes
Drain the potatoes and arrange them on a parchment-lined baking sheet. Using the bottom of a glass, gently press down on each potato to flatten. Drizzle with olive oil, 1 tsp salt, and 1/4 tsp pepper.
4. Bake the Potatoes
Bake for 20–25 minutes, or until slightly golden. Don’t over bake—they’ll go back in the oven later.
5. Cook the Ground Turkey
While the potatoes are baking, combine the ground turkey, 1 tsp salt, 1/4 tsp pepper, and garlic powder in a bowl. Heat 1 tbsp olive oil in a skillet over medium-high heat, then cook the turkey. Midway through, add 1 tbsp yellow mustard and stir to combine. Once cooked through, transfer to a bowl.
6. Make the Secret Sauce
In a small bowl, mix together the mustard, mayo, ketchup, vinegar, sugar, pickle juice, and diced pickles until smooth. Set aside in the fridge.
7. Assemble Your Nachos
Sprinkle the cooked ground turkey evenly over the smashed potatoes on the sheet pan. Top with shredded cheese.

8. Broil Until Melty
Place the sheet pan under the broiler for 2–5 minutes, or until the cheese is melted. Watch closely to avoid burning.
9. Add Your Toppings
Remove from oven and top with shredded lettuce, pickle slices, and a generous drizzle of secret sauce.

These In-N-Out inspired Cheeseburger Sheet Pan Nachos are a delicious and creative way to enjoy a leaner cheeseburger! Made with ground turkey, smashed baby potatoes, and topped with an In-N-Out inspired secret sauce.
Ingredients
For the Cheeseburger Nachos:
1.5 lbs Baby Potatoes
3 tbsp Olive Oil
2 tsp Salt
1/2 tsp Pepper
1 tsp Garlic Powder
1 lb Lean Ground Turkey
1 tbsp Mustard
3–4 cups Shredded Lettuce (I used Romaine Lettuce but Iceberg Lettuce works too)
1–2 cups Shredded Marbled Cheese
2–3 Small Dill Pickles (sliced into rounds; optional garnish)
For the Secret Sauce:
1 tbsp Yellow Mustard
2 tbsp Kewpie Mayo (can sub regular if needed)
3 tbsp Ketchup
1/2 tsp White Vinegar
1 tsp Coconut Sugar (can sub regular white sugar)
1 tbsp Pickle Juice
2 tbsp Dill Pickles (finely diced)
Instructions
Preheat Your Oven to 400℉.
Par-Boil Your Baby Potatoes: Start by bringing a large pot of salted water to a boil. Drop your potatoes in a boil them for about 10 minutes until soft (test this by sticking a fork in one, if the potato slides off of the fork then they are done).
Smash Your Potatoes: Line a large baking sheet with parchment paper. Place your baby potatoes an inch to an inch and a half apart on the baking sheet. Using the bottom of a water glass, gently press down on each baby potato until it has flattened. Repeat until all of the potatoes are smashed, then drizzle with olive oil, 1 tsp of salt, and 1/4 tsp of pepper.
Bake Your Potatoes: Place your baby potatoes in the oven and bake for 20-25 minutes until slightly crispy. You don’t want to over bake your potatoes in this step because you will be returning them to the oven to broil when you melt your cheese!
Prepare Your Turkey: While your potatoes are baking, add your ground turkey to a bowl with 1 tsp of salt, 1/4 tsp of pepper, and 1 tsp of garlic powder. Mix to combine.
Cook Your Ground Turkey: Place a large pan over medium-high heat with 1 tbsp of olive oil. Add your seasoned ground turkey into the pan and mix occasionally to cook it through. About half way through cooking, add in your tbsp of yellow mustard and continue to mix until the turkey is fully cooked. Transfer your turkey to a heat-safe bowl to keep it from over cooking.
Assemble your Nachos: Once your potatoes are baked and ground turkey is cooked, use a spoon to sprinkle the ground turkey over the top of your smashed baby potatoes (right on the baking sheet!). Add en even layer of your shredded cheese over the top.
Broil Your Nachos: Place your “nachos” under the broiler for 2-5 minutes until the cheese has melted over the top of your turkey and potatoes. Remove them from the broiler immediately to keep from overcooking the nachos!
Dress Your Cheeseburger Nachos: Add your sauce, shredded lettuce, pickles, and any other toppings you enjoy over the top of your sheet pan nachos. Serve and enjoy!
How to Make the In-N-Out Inspired Secret Sauce:
In a small bowl, add your yellow mustard, Kewpie mayo, ketchup, vinegar, coconut sugar, pickle juice, and diced pickles. Mix until fully combined (should be a pale pink color) and set aside in the fridge until it’s time to dress your nachos.
Notes
*When cooking your potatoes and ground turkey, you want to make sure you don’t overcook the ingredients. Doing so could cause them to dry out during the final broiling step!
