Delicious and wholesome dense bean salad inspired by the viral La Scala Chopped Salad!
Ingredients
For the Salad:
1 can garbanzo beans
1 can canneli beans
1 cup mozzarella cheese (grated)
1/2 cup salami (sliced)
1/4 cup red onion (diced)
1/4 cup peppercinis (diced)
For the Dressing:
1/2 c olive oil
2 tbsp red wine vinegar
2 tsp Dijon mustard
salt (to taste)
black pepper (to taste)
1/4 c grated parmesan
Instructions
1. Rinse and drain your beans; chop/shred salad ingredients and add to a large bowl
2. Add your dressing ingredients to a jar and mix/shake well until combined
3. Pour the dressing over the salad and toss everything together until the salad is fully coated
4. Serve or transfer to a container to marinate in the fridge before eating (it gets better over time!)
