Christmas morning is jam-packed with gifts, laughs, and un-stuffing stockings, so the last thing you probably want to do is have to put together a breakfast for everyone and miss the holiday morning fun. Luckily, you can make this healthy breakfast casserole ahead of time and all you need to do is pop it into the oven or reheat it on Christmas morning for your family to enjoy.
If you want to pull the casserole fresh out of the oven on Christmas morning, the day before you’ll want to chop up all of you ingredients, combine your egg mixture, and refrigerate that overnight. The next morning, add your sourdough and egg mixture into your baking dish and throw it into the oven to bake while you open presents.
Alternatively, you can bake this casserole a day or two before Christmas and then leave it covered in the refrigerator. On Christmas morning, quickly reheat it in the oven or microwave and serve with your fresh garnishes – no one will have any idea that you made it ahead!

Ingredients:
- Egg whites
- Eggs
- Chicken Sausage
- Goat Cheese
- Sourdough bread
- Spinach
- Bell peppers
- Salt
- Pepper
How to Make Healthy Breakfast Casserole
Preheat your oven to 350 degrees F
Prepare Your Ingredients: Start by cutting your sourdough bread into cubes. Dice your bell pepper and roughly slice your spinach as well.
Make Your Egg Mixture: In a large bowl, whisk together your egg whites, eggs, diced bell pepper, spinach, goat cheese, and chicken sausage.
Assemble Your Casserole: Add your diced sourdough to a 9×13 inch baking dish and pour your egg mixture over the top.
Bake Your Casserole: Place your casserole in the oven and bake for 45-55 minutes until cooked all the way through. Remove from the oven and allow to cool for 10-15 minutes before cutting.
Garnish And Enjoy: Garnish with fresh chives and additional goat cheese, serve, and enjoy!

Healthy Breakfast Casserole
Ingredients
- 6 c sourdough bread (cubed)
- 2 c chicken sausage (diced up)
- 1/2 c Goat Cheese
- 2 c Spinach
- 1 diced bell pepper
- 16 oz Egg whites
- Salt (to taste)
- Pepper (to taste)
- Chives (optional garnish)
Instructions
- Preheat your oven to 350 degrees F
- Cube your sourdough bread and place it into a 9×13 inch baking dish
- Dice up your chicken sausage, bell pepper, and spinach and add it to a bowl with your eggs, egg whites, goat cheese, salt, and pepper
- Whisk the egg mixture until combined – add a couple tablespoons of water if needed
- Pour your egg mixture into your sourdough lined baking dish and place in the oven for 45-55 minutes until cooked through
- Remove your casserole from the oven and allow it to cool slightly before cutting and serving
- Top with fresh chives and additional goat cheese
