These simple Maple Chicken Breakfast Sausages use only a few ingredients, taste great, and are so versatile! I love meal prepping these at the beginning of the week to enjoy on a breakfast sandwich or in a breakfast bowl for a clean and delicious source of protein!
Why Make Your Own Breakfast Sausages?
I started making my own breakfast sausages when I decided I wanted to know exactly what went into the food I was eating – and I absolutely love them! These only require a few ingredients – ground chicken, seasonings, and a little maple syrup – and they cook fast, making them an easy meal prep item.
Maple sausages are one of my breakfast favorites, but I love how easy it is to tweak the ingredients in these to make them different flavors for different palates.

Maple Chicken Breakfast Sausages
Ingredients
- 1 lb. lean ground chicken
- 1 tsp salt
- 1/2 tsp pepper
- 1/2 tsp garlic powder
- 3–4 tbsp maple syrup
Instructions
1. Add everything to a bowl and mix well until combined
2. Using an ice cream scooper or large spoon, divide the meat into even-sized balls; place a large sheet of parchment paper on a flat surface and put each ball onto it at least 3-4 inches apart
3. Spray one side of another sheet of parchment paper with nonstick spray or olive oil; oil side down, place it over the pre-rolled meat balls, then press down on the parchment using a cookie sheet to flatten them into thin meat patties
4. Carefully remove the parchment paper from the tops of the patties, and using kitchen scissors, cut squares of parchment around each patty (trust me this will make your life easier when cooking)
5. Heat a large pan over medium-high heat with avocado oil, then place 2-3 of your chicken sausages patty-side down into the pan; after 30 seconds or so of cooking, you can peel the parchment away from the patty (it should easily release)
6. Cook each patty for 1-2 minutes until golden, then flip and cook the other side; once completely cooked, remove and repeat the process until all of the patties are cooked
Notes
Enjoy these maple chicken sausages throughout the week on their own or in a breakfast sandwich!
